White Chili, "Yuburrito," & Brownie Pie

I guess it's finally winter here, so it was perfect weather for chili. Instead of our usual sweet potato and black bean chili, I decided to try a veganized version of a killer white chicken chili I used to make. I started with a basic potato soup recipe, then seasoned it with chili spices, and added white beans and baked tofu. It was every bit as good as the chicken version, but with no chicken, butter, cream, or cheese. It was thick and chunky and spicy, and warmed and comforted us cold weather wimps. We finally bought some yuba sheets (I've loved all the things Megan did with hers http://meganthevegan.blogspot.com/) and wanted to fill it with a mexican style filling, thus, the "yuburrito." Since it was our first time to play around with it, we decided on one giant burrito, filled with beans, roasted red peppers, and green onions.

Of course we had to have our broccoli. I got this giant broccoli from the farmers market Saturday morning - it was broccoli heaven. Get a load of the size of this!


I used a little more than half of it for roasted broccoli and onions.



For dessert I wavered between smores pie and brownie pie all week, but when I couldn't find any vegan marshmallows, decided on brownie pie. Well, I broke the pie crust this morning, and thought, oh well, I can make crustless brownie pie. Then tonight the soy whip turned out to be a dud, so we really ended up with PPK brownies baked in a pie plate. Bazu posted about these earlier and they looked so yummy. http://wherestherevolution.blogspot.com/. The batter was super stiff and hard to mix. But they turned out to be pretty cakey with a fudgy center.

I've never ever heard of white chili before. It looks and sounds amazing. Don't suppose you could share the recipe?

I'm so happy you found some yuba to use. Did you like it? Did it get crispy?

What a good idea. I've never heard of "white chili" either, but it looks so good.

Yuba! I had never heard of it until Megan's blog. I like the idea of it, and you both did a great job filling it! :P Yum!!

I didn't like the Soy Whip stuff either. I just use Spy Delicious ice cream now instead. (just soften it up a bit and pipe it on.) Lol. (Make-shift whipped cream until a better one comes out. Lol!)

The brownies look so fudgey and good.

winter shmiter to you.. I will posting some pic .. from our neck of the woods.. last week it was in the teens (brrr!!!) now.. we again have MORE flippen snow! like 92 inches in the last month..yes, I know I live in Alaska, but, usually where we live is more like Seattle weather.. warm and rainy!! ohh my aching back!! (from shoveling)..

Candi, we were wishing we had Soy Delicious vanilla SO BAD. Those brownies are so fudgy they really need their top and bottom!

You know, I'd often craved white chili before but wondered what a vegan version would be like. I love the sound of yours! Don't worry about being cold weather wimps, I'm all the way up here and I'm a total wimp, too! And I don't even have any excuses!

It's cool to see that PPK brownie in pie form! They were really good. (And I found the technique intriguing) I'm still on the quest for the fudgiest non-cakiest vegan brownie.

I love that broccoli- now, everytime I eat broccoli, I think of you!

What an awesome idea for the yuba! Did it get all crispy-like? I use it for a couple other recipes, but think my kids would LOVE it that way!

Everything looks wonderful here Diann. I have been looking everywhere for yuba sheets. I hope I can not-bake with them once I find them.

What happened with the soy whip? What do you mean, a dud? Let me tell you, one time I bought soywhip and I got home and it was pre-opened and moldy. I didn't learn my lesson because the next time I got one,the pushy spout thing didn't work... Now, I always open the top, and check it at the store to make sure it is untouched, still in tact, and will work... same thing with soymilk, I bought one once that was pre-opened on the inside... I check everything now...

I can't wait to see what your Gypsy Soup looks like... I currently have a bunch frozen (I'm hoping it freezes well). Great post.

Oh, I used to love white chicken chili. I'm very excited to try your veganized recipe. Especially in this cold weather. Brrrr. I'm so used to California weather this is a definite shock to my system.

All your food is making me hungry! I used to like white chili a lot, too. Your vegan version looks almost like cheese soup!

I had been curious about the soy whip after seeing it appear at Whole Foods awhile back. I never liked Hip Whip, though, so I was skeptical to try another vegan whipped cream. Maybe my skepticism has been confirmed!

Wow that's a lot of yummy stuff! I totally have to get my hands on some of those yuba sheets! Sorry to hear the soy whip was a dud; I saw it in the HFS and was really excited about it although I didn't buy any yet. I've been lazy this last week... cooking the same things... waiting to be inspired again. :)
