I enjoyed the opportunity Sunday to cook with all my fresh foods. I made a Peasant’s Meal of beans, greens, rice, and veggies, completely gluten free. I really really like the dried sweet peppers I bought. I like them much better than the jarred roasted peppers and they are not as acidic as sundried tomatoes. I should dehydrate my own.
No real recipes this post, just pictures of simply prepared foods because when food is fresh, simple is best.
I forgot to mention that I got some fresh field peas in my CSA box. I cooked them in some broth and threw in some of the dried peppers.
Lovin' the gluten-free meals!! :0)
ReplyDeleteYour food always looks soooo uber-yummy!
ReplyDeletethis looks wonderful! and i understand about not leaving as many comments as you'd like...i'm just trying to keep up!
ReplyDeleteI definitely love the look of that kale, too!
ReplyDeleteLOL there is a little broccoli in there... because it wouldn't be a meal without broccoli, right?
ReplyDeleteNext time, though, I will add more-- just for you ;o)
This looks incredible. I love beans and greens - putting that on the menu for the week. I've got some gorgeous kale too! Thanks for the ideas!
ReplyDeleteNo worries, but it looks like the theme today was "Simple". We too ate simple tonight. It is fun being vegan. YOu can be simple and enjoy!
ReplyDeleteI couldn't agree more - simple is best when you've got delicious, fresh yummies!
ReplyDeleteAnd no worries on the MoFos - I'm starting to fall behind on commenting, too... but it's so great to clog up the blogosphere with all our vegan goodness!
Everything looks amazing, especially the kale and the peas!
ReplyDeleteDon't worry about the comments, I doubt that anybody can keep up with all those fantastic MoFo posts. I spent the weekend out ot town and when I came back, I found 200 unread posts in my reader.
P.S. I wanted to make your gluten free cookies for a friend of mine, but found out that she also can't tolerate oats (oats are not considered gluten free in Germany). I think I will try those one day with some kind of substitute or I'll make them anyway for myself :)
It's hard to keep up with all the VeganMoFo posts, isn't it? There's so much yumminess out there.
ReplyDeleteYou always amaze me with your revolving variety of healthy, colorful food.
it's always the fresh, simple meals that = the best! and very cool on the gluten free meals. i have always wanted to reduce my intake of gluten - i'm still looking into this - and it's nice to see lots of gluten free goodness around! mmmmmmmm! those dried peppers sound perfect. that's what i don't like about those jarred sun dried tomatoes too - the acidity. ick! dan and i started making our own roasted red peppers - totally worth it, indeed!
ReplyDeleteyour roasted veggies look perfect! and it's nice to see your jezebel suace on top of all that glorious kale!
no worries on the comments - veganmofo is kinda awesomely overwhelming, indeed!
I know what you mean about all the mofo posts. It's hard work keeping up with them all so I can't comment on everyone but I try to get to everyone off and on but I read them all.
ReplyDeleteIt all looks great, especially the kale. I love kale!
Fresh is always best... and your food is always both!!
ReplyDeleteI know what you mean about the out of control numbers of posts right now! I am so behind!!
I love the photos in this post. Everything looks so good!
ReplyDeleteThe veggies look sooo good. I find lately I am quite happy with a plate of mixed lightly steamed veggies and nothing much else.
ReplyDeleteadopt me. please.
ReplyDeleteEverything looks wonderful here..as usual :-)
ReplyDeletewhen I was raw I bought bunches of sundried tomatos with thoughts of tomato sauce swimming through my head, only to find that I can't eat much sun dried tomatoes, they rip my stomach to shreds. I'll bet you have the same trouble.
ReplyDeleteEverything looks great, as usual!
ReplyDeleteInteresting to know.
