End of Summer Food

Finally the 100 degree weather has gone and we’ve actually gotten some much needed rain. Perhaps I’ll feel like doing some real cooking soon! Until then, here’s some of what I’ve been eating recently.

First the raw foods:




Raw spaghetti sauce made with sundried and fresh tomatoes over zucchini noodles and shredded romaine lettuce. I wasn’t crazy about the sauce, but I loved the lettuce mixed with the zoodles.

Raw broccoli salad, with mango, avocado, green onions, and dried cranberries – very yummy.


Marinated portobello salad from Whole Foods raw bar – fabulous!



A green salad with mango tomato dressing and sprouted legumes.
And a couple cooked dinners:


Yellow squash stirfry with mushrooms, tomatoes, and green peppers over zoodles.


And a Lentil Veggie Wrap (from one of Dreena’s books – can’t remember which!) wrapped in romaine instead of a tortilla. This was so delicious. I ate a ton of them!

  2. Every dish looks so fresh and delicious I find myself wanting to eat them all. One of these days I'm going to get a spiralizer - been wanting one for years. I hope you have some beautiful and cooler fall weather to look forward to.

    Everything looks lovely! I have seen zoodles on everyone's blogs lately and I love the idea. My crazy boyfriend won't eat raw zucchini though!

  9. i'm glad the heat is on its way out. so awesome! hooray for some rain, too! :) all the raw eatz look beautiful & so fresh! i'll have to try the marinated portobellos if we have them at our whole foods, and the wraps are awesome, Diann! i love the broccoli salad and your salad with the mango tomato dressing. mmmmmmmmmmmm!

  10. ERFI - The spaghetti recipe is based on a recipe from raw chef Russell James, and I can't remember where the broccoli salad recipe came from, but it was sure good.

  16. That mango dressing looks really tasty. I have done a passion fruit vinaigrette before that worked really nicely with a similar salad.

  17. Wonderful end of summer meals! I'm currently eating "easing into summer" meals :P

    And look at the gorgeous purple colour of your dried cranberries!!! Fascinating! Ours are all a pinky red shade here.
