Lots of Mushrooms and Joyous News!

There’s excitement in the eat’n veg’n family, but first let’s see how mushroom crazy I’ve been lately.

Along with plenty of the fresh variety, I snagged a huge bunch of dried mushrooms from Costco in Alabama. I don’t love rehydrated mushrooms, but they’ll do in a pinch, especially when they’re rather exotic.



I’ve made all these yummy dishes:

Broccoli and Mushroom Stirfry



Snap Peas and Mushrooms



Purple Cabbage with Mushrooms and Pickled Ginger. Isn’t it colorful!!!
In addition to all the mushrooms, I’ve really been enjoying the seasonal produce.


Roasted Cauliflower with Tandoori Spices



I got this beautiful kale in my CSA box.



I steamed it with some green garlic, also from my box.

I’m eating clean these days, pretty much low fat high raw until at least March 27. What’s so special about March 27? That’s the day Chase gets married!!!!! I’m so excited I can hardly stand it!

    All your vegetable dishes look really wonderful, I love the look of mushrooms after you cooked them, they look so delicious. I am a huge fan of mushroom, now I'm craving mushrooms again:)

    I'm not a big mushroom fan, they seem to be something people either love or hate. I've tried the odd ones like those that are a little meatier, and I can tolerate them a little more! but everything looks really yummy!

  5. Congrats on Chase getting married. But in just about 2 months. Sounds frantic.

    And as for mushrooms, I'm not sure they like me and I don't really like them. But I've found a lot of recipes that use them as a hidden ingredient, so even if they are plain old button or crimini, they still show up from time to time for me.

    I've also been enjoying seasonal produce and have a newfound appreciation for cauliflower. Your dishes all look great--high raw sounds just about right to me these days!

    All the veggie dishes look colourful and delicious. We've been looking into getting local produce boxes, but haven't had much luck finding ones that seem right. Can you tell me what a CSA box is?

  9. Congrats to Chase! And I'm really loving mushrooms right now too. I was in San Francisco last week and ran upon an awesome dried mushroom shop, but I was afraid airport security wouldn't let take mushrooms in my carry on. They probably would have, but no way was I gonna check a bag. So...I didn't buy any. Sigh.

  12. March is really soon — congratulations! That's very exciting news. Your veggie dishes look wonderful to me - just the kinds of things I love to eat. We love to cook with mushrooms, both fresh and dried, and always keep dried shiitakes on hand. And kale is my favorite vegetable.

    Allison, a CSA box is a box of fresh produce from a local farm. CSA is Community Supported Agriculture.

    Erica, yes green garlic! It looks like green onions and tastes very garlicky - yum!

    My friend and I were recently discussing about how modern society has evolved to become so integrated with technology. Reading this post makes me think back to that discussion we had, and just how inseparable from electronics we have all become.


    I don't mean this in a bad way, of course! Societal concerns aside... I just hope that as memory gets cheaper, the possibility of uploading our memories onto a digital medium becomes a true reality. It's a fantasy that I dream about all the time.

    i'm digging all your rock'n mushroom dishes. dan just now has started liking mushrooms - so i'm excited we get to incorporate them into more meals. mmmmmmmm! the roasted cauliflower looks so good, too. i need to roast some up sometime, i just always forget it's an option - and such a tasty, tasty one! :)

    Virtual Memory sure is becoming cheaper and cheaper and cheaper. I'm curious as to when we will finally hit the rate of $0.01 to 1 GB.

    I can't wait for the day when I will finally be able to afford a 20 TB hard drive, hahaha. But for now I will be satisfied with having a 32 gig Micro SD Card in my R4i.
