Food We Love

Our family Valentine dinner on Sunday was not as “heart-y” as last year’s dinner. I decided to just put together a meal consisting of our favorite foods.

Peanuts, in sauce form on Lettuce Wraps, an easy and tasty appetizer.



Chickpeas, in Vcon Chickpeas Romesco with Garlic Saffron Rice. This was an excellent dish. Chase has proclaimed Isa and Terry the Sauce Queens.


Roasted Veggies. We love all veggies (except okra, celery, and eggplant), especially roasted. For this dinner we had purple potatoes, Brussels sprouts, tomatoes, and onions.


Broccoli. Every meal has a side of broccoli. Here’s my plate.


Coconut. I admit dessert was a tough decision. I also love chocolate, oatmeal, and all things fruity, but not too sweet. Vcon’s Coconut Lemon Bundt Cake seemed like the perfect choice with tart lemon and no sugary frosting. I was thrilled when it fell out of the pan in perfect form.



This beautiful cake deserved special plating when sliced.



The cake is moist with subtle flavors of lemon and coconut. It is delicious. Mmmmmmm.

    Isa an Terry definitely are the queens of sauces! Their sauces make everything better. =)

    My mom told me about purple potatoes yesterday, but I didn't believe her! I guess I owe her an apology.

  3. Mmmmm, all looks delicious to me!! I just had my first taste of roasted purple potatoes last night... now I need to run back to the store for more! I also need to follow your example and start roasting veggies together... for some reason I usually just roast one by itself. PRobably stems from me being afraid of different things touching on my plate when I was a kid.
    Dessert looks awesome. Hope you have a happy V-day too!

  5. Mmm... roasted veggies... Especially sauteed in maple syrup! Okay, I took the health right outta that! haha ;)

    Don't you just love bundt cakes? They're always the perfect shape and texture. Yours looks delicious! I can't wait to try that recipe, myself.

    That bundt cake looks so beautiful. It's nice to see some Vcon recipes... I haven't actually used that book much yet. But I've gotta bake something for a baby shower this weekend... so that perfect bundt cake is looking good!

    ANd I've been eyeing that coco-lemon cake, since those are 2 of my favorite flavors. I think we have the same Bundt pan

  13. What a lovely dinner. I think peanuts are one of my top favorite food groups, next to chocolate and brussel sprouts (what a diverse palate). I have also wanted to make that bundt cake for so long. Too bad there is no gluten free version.

  14. Oooh, I love lettuce wraps - especially the vegetarian ones at P.F. Chang's! I cannot even begin to imagine how yummy yours must be with the peanut sauce. :)

  15. oh my goodness, the peanut-sauce lettuce wraps, chickpeas (haha, I love how Chase calls Terry and Isa the "Sauce Queens"), roasted vegetables (you KNOW that that's a VeggieGirl favorite, for sure), and the bundt cake (I love the bundt recipes in Veganomicon - I've made a carob bundt cake out of the deep-chocolate bundt recipe before, with amazing results) look PHENOMENAL!!
