What’s Better Than 5-Minute Chocolate Cake?

Okay, lots of things are better than the recipe I posted for that Cup O’ Cake, but the answer is:

3-Minute Fudge!


(adapted from about.com)
Ingredients:
1 ¾ c. powdered sugar, sifted
¼ c. cocoa, sifted
2 T. nondairy milk
¼ c. margarine or coconut oil
2 t. vanilla extract
¼ c. chopped nuts, optional

Directions:
In a glass bowl, combine the sugar and cocoa. Stir in milk and margarine (it will be lumpy). Cook in microwave on high for 2 minutes. Stir until smooth. Add in vanilla and nuts, if using. Spread into small loaf pan. Let cool, then cut into squares.

This was really good! It’s very creamy, although not perfectly smooth. And it was pretty sweet. I think next time I’ll use peanut butter instead of coconut oil and it will be just right. I cooled mine in the fridge a few minutes. It’s not as pretty when you do that, but hey, if you make 3-minute fudge, you need chocolate NOW!

  1. My answer: not much! I was actually planning on making a no-bake chocolate tart this weekend, so we must be on the same wavelength :) Considering my budget, I might have to skimp a little on the ingredients, though. Thanks for this!

    I can't even read the ingredients in this recipe. Why? Because then I know I'd just go make it, and eat it. Fudge in 3 minutes??? Somebody, stop me. . . .

  8. Oh boy! I don't have a microwave FORTUNATELY! lol.. but I like the peanut butter idea.. hmmm.. I'll bet I could figure out something with peanut butter and chocolate too..
