Casseroles and Guess the Treat

Earlier this week the kitchen in my office smelled like Indian food. I had a huge craving and then an idea for dinner that night. I already had roasted eggplant slices I made the night before.




So my idea was to make an Indian lasagna using the eggplant for noodles. I made my filling, but then got too hungry and impatient. I sliced up the eggplant and added it to my filling and thus ended up with Eggplant Curry and satisfied my craving.


Still in the mood for a veggie lasagna, a few nights later I roasted some zucchini slices. I layered them in a bread pan.


Added a filling…


Topped with nooch and baked for 30 minutes.



Patience pays off and I had myself a delicious gluten free, veggie-full lasagna.



And now a game! Can you guess what I’ve dipped in chocolate for Chase’s yummy Easter treat?

  1. All that delicious food and no recipe! Not fair. I would love to make that veggie lasagna. It looks amazing. There is something so good about a mix of healthful things baked together like that.

    As for the dipping- hmmm. I just wrote about nuts so that is where my mind is and so I am going to guess hazelnuts and cranberries.

  5. That casserole looks amazing. And the treats? I'll second hazelnuts. Or cherries? Raspberries? Really, anything would be great because--IT'S DIPPED IN CHOCOLATE! :)

  7. The eggplant curry looks wonderful. And I had to laugh that you cut up the eggplant and added it - that's something that I would do! The lasagna looks great, too.

    I too thought chickpeas at first, and then thought "wait, that might be too weird...what else is shaped like a chickpea?" and landed on hazelnuts.

    But the more I think about it, the more I want to try chocolae-covered chickpeas...especially if they're roasted first in some sort of cinnamon-cayenne spice. Too weird?

    great ideas for the lasagna! Like a sort of ratatouille but with Indian spices - I need to try that!

    I first thought hazelnuts but I'm also thinking chickpeas would be tasty because roasted chickpeas are mighty good.

    My first thought was cherries, but it isn't cherry season, so I have no idea. After reading everyone say chickpeas, I guess it does look like garbanzos!

  22. I have to agree, with almost every one here, my first impression was that they were chocolate covered chickpeas.. then I thought that would just be crazy.haha
    so maybe they are hazelnuts?

  26. they really look like 'banzos! but I guess they are probably hazelnuts... because that would be a bit more normal, and probably yummier too. mmmm Either way, looks like you did a great job tempering your chocolate!

  33. oooh! those looks like the peanut butter balls my mom used to make at christmas...mmm! or are they a nut of some kind... hazelnuts? i can't tell from the picture how big they are ;)
