The First and The Last

Perhaps I’m the first to post about Laura’s yummy Refried Lentils. I always have lentils in the pantry and I always want to make Indian dishes with them, so I was excited to find a recipe using them in a TexMex way. I followed the recipe exactly, and also added a red pepper that I didn’t want to go to waste.




I made a taco salad without the tortilla shell.

Perhaps I’m the last to make the Seitan O’Greatness. Seitan is not a gluten free girl’s friend, but I wanted to make it for my son. I did have a taste of it and I thought it was excellent, very spicy and a great texture. Chase loved it too, and he commented that he thought it was not as good warm as it was cold. It didn’t turn out too dry, except for the end where the foil exploded for some reason. I guess I need to look for super duper extra heavy duty foil.


And thanks to ppk forums for posting the nutritional information. (Chase said he was glad to know he could eat the whole thing!)



Sometimes I get stuck in a food rut, tending to eat the same foods all the time. Now I only want Indian food, so I’ve tried to get away from that. I made some Italian Broccoli and Cauliflower…..




…. and some Italian Green Beans with red peppers and yellow squash….


….. and a cucumber and radish salad simply dressed with vinegar and oil.

I'm glad the recipe worked for you! A pepper would be a delicious addition. I'm lovin' all your veggie dishes, the cucumber and radish salad perhaps being the best. It all sounds simply fabulous.

oooh so much veggies. You'd think I'd be getting sick of them (I kinda am!), but they look really good. I love a radish.

The refried lentils sounds really interesting, too. I will have to try those sometime.

It's slowly starting to be more spring-like here....after that wild nor'easter! I made the seitan o'greatness, but just had some thing/cheapo foil from the dollar store...I just did a good double wrap and had no problems.

The refried lentils look good! I really liked the idea of them when I saw them on Laura’s blog. Don’t worry, you’re not quite the last one to try the Seitan O Greatness! I think that will be me! I will do it eventually!

Looking good! You are not the last one to have not tried the yummy Seitan O Greatness. I have yet to handle cooking so much. Part of me wants to hit the pain pills (which i hate to take and don't) just to cook. I hope tomorrow is a better day. I am going to have to make those lentils. Love lentils. Heavens lil treasures.

That's so great that you did up Laura's recipe... so nicely, too. Love the dish your taco salad is on, too. Cute plate!! That seitan o'greatness... it's EVERYwhere!! Yours is lookin' good... I've been really digging lentils lately. Guess I'm not the only one.

I hate radishes, but your salad at the end looks good enough to almost make me eat them. Almost. :)

Refried lentils...what a great idea. Thanks for the heads up about this recipe. You did a good job shaping the Seitan O' Greatness. My turned out with a large bulge on one side. All your veggies dishes look terrific.

Supposedly the weather is going to be springlike this weekend...the weatherman on tv is teasing us with hopes of 70 degree weather. It's hard to believe that when it's only in the 40's right now.

I'm glad it's springy where you are, and it's starting to warm up here too. Yay! :)

I have made the baked seitan, but mine was dry. :( I will try again now that I have vegan worcestershire sauce. Lol! Yours looks good!

I really love the cucumber and radish salad. So light and crunchy, I'd love it!

oooh, you made laura's refried lentils, & they look just as fabulous here (i love the inspiration we get from other bloggers) can you believe i have not made the seitan o' greatness yet *hangs head* so you may be the next to last! the freshness of your radish salad jumps right off the screen. congrats on your nomination -- i voted for your beautiful blog -- good luck! :o)

the radish and cuke salad looks so good and refreshing. I need to make up a pepperoni type seitan o greatness for Monday... we are having vegan pizza at the cafe!

Oh no - I've missed so many of your posts! I haven't been hopping around the blogosphere much lately...and it looks like I've missed some good food. I would love a piece of that cornbread in the previous post. Cornbread is one of my favorites, even though I haven't made it in awhile.

It is definitely not springlike around here...but I'm hoping it will warm up a little this weekend. Have a good one!

I get stuck in food ruts all the time. A few weeks ago I stir fried every night for a week. Seitan o’ greatness is still on my list of foods to try and the lentils look really yummy.
