Fourth of July Meal on Wheels

I packed up a typical 4th of July dinner to take to my mom’s for dinner for just the two of us. I made black bean and veggie patties (mom supplied the condiments for our burgers).




Potato Salad


Mango & Avocado Broccoli Slaw


and a delicious Fresh Strawberry and Blueberry Pie in Lemon Crème!


This year a quiet celebration of good food and watching fireworks on TV was just fine for us.

Dynise, we don't have TJ's in Austin. We are strictly Whole Foodies. I buy Mann's broccoli slaw. Try it in stirfries too!

Crystal, I used the pie filling from Vcon's Lost Coconut Creme Pie. I think I just added in some extra lemon juice and lots of zest, and of course no coconut.

Everything looks incredible but the pie - oh wow! I had to show it to Mom who then asked me - uh, why didn't we have a pie like that? We had mini-cupcakes because I didn't want to be tempted by left over pie.

mango & avocado broccoli slaw sounds so awesome! and your creme pie looks awesome, too! and of couse i was drooling over the potato salad and the burgers! mmmmmmmmmm! glad you both enjoyed the quieter 4th - sometimes it's nice to kick back and take it easy!

Sanja, the filling wasn't quite as firm as I wanted. If you double the cornstarch, it will be almost the exact recipe from More Great Good Dairy Free Desserts, which was perfect.

Awesome holiday meal, start to finish. The patriotic pie looks delicious, even if the filling didn't firm up like you wanted. Just means it's okay to lick the plate :)

OMG that pie is sooooooo BEAUTIFUL!!! Once again I'm SO psyched to have found this blog! And now I can read all of your posts (yes, I will... RIGHT NOW) and it's like being a kid in a candystore for a healthy foodie!!!

(PS) The mango, avocado-broccoli slaw?!?!?! GENIUS! I'm a broccoli f.r.e.a.k. (proud to be. period.) and can easily eat a steamed 2 lbs :) (snacking, of course!) But avocado and mango are other faves of mine, and well, that is just pure bliss!

I wish that your meal of wheels had made it to Houston! Everything looks so fresh and seasonal. Oh, and that pie, looks like we were thinking along the same lines for our 4th of July desserts :-)
