Funky Tacos and My New Favorite Flavor Combo

The tacos don’t taste funky at all. They’re funky because they don’t have any “meat,” beans, or “cheese” in them. Corn tacos are filled with purple cabbage, carrots, mushrooms, and onions, and spiced with garlic, chili powder, and cumin. Sort of macrobiotic and really yummy!





The hot sides are quinoa, corn, pintos, and a fabulous local salsa mixed in, and brocooli.





The cold side is avocado and a farmers market tomato, simply seasoned with lime juice and a pinch of salt.




This was a fresh, flavorful, delish meal.


So my new favorite flavor combination is ….. strawberry with avocado!




This salad was awesome! I sprinkled some hemp seeds over it and made a balsamic vinaigrette to pour over it. While I was eating it, I kept thinking how good it would be in a wrap or as a grilled sandwich. I’m not kidding – it was mmmmmmmmmmmmm.


(Is that a new plate, you ask? Why, yes, it is – a mother’s day gift from Liz!)


With the salad I had sautéd broccoli, cauliflower, and lima beans. I don’t know, all foods I like and it tasted good together. I put a little nutritional yeast on top.





I made more oatbran muffins. This time I added ¼ teaspoon more baking soda and substituted half of the soymilk with applesauce. Perhaps that’s why these were the tallest oatbrans muffins I’ve ever made.




One night for a snack I made some oatmeal with blackberries and raw chocolate – very nice. Blackberries (not organic) are 97 cents!





I have two bushes in the front yard that only during May produce beautiful purple flowers. With all the rain, I have hundreds of blooms and buds. I couldn’t get too close because I didn’t want to disturb the busy bees.




Don’t forget to try strawberry and avocado!

It actually looks really good. I'm not so sure about the strawberry avocado combination though. I don't think I'm quite that adventurous yet. Nice plate!

Heeeey - you got some raw chocolate nibs! I tried to make some of mine into a raw chocolate bar, first grinding them in a coffee mill, and it almost shorted out my coffee mill. Then it gave me horrid zits :) I'm afraid I ate alomst the whole thing in one day - ahh, ever the sensetive type.

I agree with the combo of avocado and strawberries. I also eat salad with mango and avocado which is another good combo. I'll have to give hemo seeds a shot on my salads....do you know if they are better for you than other seeds and/or nuts? I think I remember hearing that hemp oil has a lot of omega-3s, wonder if the seeds are a good source also or if they have to be ground up like flax.... Beautiful flowers, I love spring in Texas!

Just dropping by to say hello, love your photos and ideas for serving lots of yummy dishes together. Especially, wanted to say that your photo of banana with tacos and salsa a while ago seemed such a great idea - I have finally put my thoughts into action and made a great dish with bananas served on peanut stew.

I don't have hemp in my seed collection! Is is especially good for you?

Noodle and holler - hemp seeds are a good source of omega 3 and protein. They are comparable to flax seeds, but they can be sprinkled on and eaten whole, no need to grind.

Oh how yummy the tacos look! My kinda meal. I love the combo of pinto, quinoa, and corn. I am getting ready to put a pot of pinto beans on. I think I may have to try this. This post is simply delightful!!

Happy belated Mother's Day. It sounds like you had a great Mom's weekend, first with Chase and Liz and then with your mom.

I love the funky tacos -- one of the places here makes a mushroom quesadilla (minus the cheese, substitute beans) but I've never considered using just veggies at home. Or, strawberries and avocado...I think that may be an acquired taste (lol), although I do love both separately.

Strawberry and avocado, I never would have guessed! I have some perfectly ripe avos right now...all I need are the berries. I wonder if it would make a good pudding, all blended together, maybe with some agave. It would be brown, sure, but it may taste good!

Mmm... I'll take some of that funky taco! It sounds so refreshing and simple. Avocado and strawberries are a combo I never would have imagined, but I'll have to take your word for it and give it a try sometime. Those purple blossoms are beautiful--is it hibiscus?
