Braised Seitan, Roasted Veggies, and Chewy Oatmeal Cookies

Sunday night dinner featured two V-con recipes. First, Braised Seitan with Brussels Sprouts, Kale, and Sun-dried Tomatoes. This was a nice dish that came together quickly. We served it over quinoa shells.




Although this recipe has many of my favorite ingredients in it, I don’t think it’s nearly as yummy as the V-con Baked Lima Beans I made earlier. I also think my quinoa shells competed a little too much with the sauce. I would recommend a plain pasta or white rice to serve with it, or even just naked with a nice whole grain roll or biscuit.

I made lots of roasted veggies for our side dish. The first pan to go in had red potatoes, carrots, and onions.



About 15 minutes later I added a second pan of purple cauliflower, broccoli, and cherry tomatoes.



When done I piled them all onto a platter. They were deeelicious, simply seasoned with olive oil, salt, pepper, and Italian blend.



For our treat I made V-con Chewy Oatmeal Cookies. I opted to use my new gluten free chips and shredded coconut instead of raisins. I might have baked the first batch just a minute longer than I wanted, but they are truly chewy cookies and as expected, awesome.


And I was right about Chase going bananas for the ED&BV Peanut Sesame Hummus. We both did. It’s fabulous!

the Braised Seitan with Brussels Sprouts, Kale & Sun-dried Tomatoes dish looks fabulous - sorry that the quinoa-shells weren't as good with the "main event" as you had hoped they would be!! oooh, and the roasted vegetable side-dish looks marvelous!!

mmm, the chewy oatmeal cookies look fabulous - I see you didn't waste any time starting to bake with the new EnjoyLife gluten-free chips! :0)

so glad that Chase liked the hummus too!! sounds like a definite "must-try" recipe from ED&BV.

I'm sorry your pasta was a bit overpowering. I'm fascinated by the idea of quinoa pasta though..another thing we don't get here in Australia.

About the moong dal salad...

Yes, the lentils are not cooked. Since the lentils are soaked in water for a couple of hours, they soften. However, only two lentils -split chana dal and moong dal can be eaten raw.

Your veggies look perfect as do the cookies. I have never seen purple cauliflower in our neck of the woods. I love it! I am all about color when I eat.

Mmm, everything looks so awesome! I have been really excited about roasted vegetables lately, and just can't get enough of them, so I am weirdly especially drooling over that pic, although the cookies and kale and pasta look to be full of greatness as well.

nice cookies - thick and chunky! and with the looks of your main course, i really wish i had been present at your dinner table last night!!! i am a sucker for brussels sprouts, and what normal vegan would say no to seitan [okay, besides the gluten-avoiders]?!

Mihl, I don't see purple cauliflower too often and this was the first one I've bought. It tastes just the same to me.
