Cookie'd Out

I hope I can break the cookie habit soon. I forget how addictive sweets can be, even vegan ones.

Here is the last of the Christmas food, including one more cookie.

VWAV Pumpkin Oatmeal Cookies with Mini Chocolate Chips and Peanuts. A kicked up version of one of my favorite cookies. I’m glad I only made a half batch.





Wild Rice with Cranberries and Pistachios. Delicious and so pretty for Christmas.



Black Bean Salad. A Christmas Eve tradition, made with black beans, corn, tomatoes, red bell peppers, purple onions, green onions, and avocados.



The first main dish I prepared after Christmas was Pinto Bean Mole Chili from the November edition of Gourmet (which featured many delicious looking vegetarian recipes). This is a richly flavored all bean chili made with toasted dried chili peppers, zucchini, and kale. It’s a nice flavor change from the typical Texmex version.




Since Santa brought me a new bread maker, I had to break it in with Tomato Bread to go with the chili. I’ve been working on this recipe for a while and I let the bread machine do all the work for me. Finally, success! It’s a beautiful color and so flavorful.



I am anxious to experiment with gluten free recipes in the bread maker, although I’m not at all familiar with yeasted gluten free breads. We’ll just have to see what happens.

I'm sweet tired also.... hard to believe I would say that, but the stufff doesn't even sound/look good right now either. I'm hankering a good ole' savory veggie stew.

Tomato bread....so fun. You should make one with spinach or something so it is green - that would be even funner!

mmm, I like your addition of the chocolate chips (CAROB, haha) & peanuts in the Pumpkin-Oatmeal Cookies; and the Wild Rice, Black-Bean Salad (what a delicious Christmas Eve tradition!!), Pinto Bean Mole Chili (I had no idea that Gourmet magazine recipes could be so vegan-friendly!), and the Tomato Bread look quite delectable - I can't wait to see all the new bread varieties that you decide to make, with your new bread machine!! :0)

I am with you on sweeted out! I am excited for the New Year and healthy eating! I told DH not to even ask for anything sweet after the 31st. lol... He agreed. Congrats on your new bread machine. I love mine! I am making some right now.

Yes, it will be nice to take a (short) break from cookies (although I'm making more today for a party). How fun that you got a bread maker for xmas! That will be so much fun to experiment with! Hope you have a wonderful New Year's Eve!

I know exactly what you mean- I'm a tad cookie-d out, too! That kind of super-baking marathon is fun, once or twice a year...

the color of your tomato bread is gorgeous! santa sure was nice to you this year.

i'm not cookie'd out yet! so your twist on the pumpkin cookies naturally sounds delicious. and yay for only making half a batch - it's probably hard to just eat one if cookies are as yummy as yours!

Your bean salad looks so good - what type of dressing do you put on it?

I finally made room on my counter for my bread machine so I can start using it again. I'll be interested to see what you come up with.

Lady, I made a batch of snickerdoodles after craving them for weeks - a full cup of earth balance (!!) - and ate almost the whole batch myself in less than a week. Not my healthiest moment. Ugh. :P

I'm just so happy to be vegan at Christmas time, because I'm not tempted by the baker's dozen boxes of chocolates we get in the office every year.

Ah, the black bean salad! So simple, yet so good. One of my faves!

I need to cut way down on the sweets, myself. I don't know what it is about the holidays that makes me think it's okay to load up on sugar.
