I prepped tons of veggies to roast – zucchini, carrots, mushrooms, radishes, red and yellow and purple peppers, onions, and sweet potatoes. Then I gave them a light coating of olive oil and a good coating of chili powder, cumin, oregano, salt and pepper.
After 30 minutes, they were perfect – slightly browned and full of flavor. And a little steamy!
I also made some easy spiced black beans. Just a can of rinsed and drained beans mixed with some spices, a little salsa, and water, and then let them cook until thickened.
I brought along corn tortillas and lettuce so we had our choice of tacos or salad. My mom ate just veggies. She loved them and wanted all the leftovers. I made myself a salad, topped with the veggies and beans – yum.
How do you like my idea of game day food? I know, you’ll probably never invite me to watch football with you!

i would totally watch football with you, Diann! today i made myself some roasted brussel sprouts to enjoy while watching the Giant game. :) i love your idea of tossing in some radishes with all those delicious veggies for roasting. (too awesome on your mom keeping the leftover veggies for herself - they must have been the yummiest!) i'm totally gonna try roasted radishes. your black beans sound fantastic and i love that you combined them with the veggies for one delicious salad! mmmmmmm!
I love your game day food! I always have to bring things I can eat, which turns out to be...oh, one dish, and then I stare at everyone else eating wings and dip and other probably-not-delicious-but-tempting-but-not-really snack food. Roasted veggies sound perfect!
I don't watch sports, but you can come over and bring food ANY time! We've been eating roasted veggies (with tofu) once or twice per week at our house these days! Dan always exclaims proudly, "this is so HEALTHY!" Woo!

I'd invite you to watch football! That looks delicious. Sometimes I get tired of chips and dips and junk food snacks ... okay, not really tired of per se, but I feel like a fattie afterward, and I'd prefer to feel the healthy way I'd feel after eating your veggie tacos.
I would love to have a game day like that! Would love not to see disgusting chicken wings.....

actually, i'm loving your game day food! sometimes i feel like having something crazy like vegan wings or something, but i think this sounds just as delicious... thanks for this post. next game day my eats are going to look more like this!
