Daring Cooks Challenge - Satay


The January 2010 DC challenge was hosted by Cuppy of Cuppylicious and she chose a delicious Thai-inspired recipe for Pork Satay from the book 1000 Recipes by Martha Day.


I made this challenge the day after coming off my detox. The only requirement to this challenge was to marinade, so I took that quite literally. I chose to prepare Portobello mushrooms in the marinade recipe given (without the oil). I put my mushroom in a big plastic bag.




I made the marinade.



And then I poured the marinade into the bag and let it do its thing in the fridge for a couple of hours.



I didn’t skewer the mushrooms, just pan seared them.



Before I got the mushrooms in the pan, I made myself a side dish of Swiss chard. First I cooked the stems with a bunch of onion.



Then I added in the whole bunch of greens.


Those brown mushrooms needed some color. The final product was beautiful and delicious!


I’m posting from my sister’s home in Alabama so if this format looks weird I apologize. I still want to hear your “must make” recipe ideas for our vegan dinner party!

I do love the hot sauce glazed tempeh recipe from VCON -- kind of like vegan buffalo wings, if you ask me! I don't know whether it's dinner-party ready, but it's one of my favorites! (I also love the curried tofu!)

What a fantastic idea! I love potobello mushroom, I've never thought of using them to make satay. It sounds so delicious with the side dish of swiss chard. I really love this idea and can't wait to give it a try!
All the photos are absolutely beautiful!

my "must make" recipes for a dinner party - hmmmm.... i love polenta stacks topped with all kinds of yummies, katie's (from don't eat off the sidewalk) tempeh wingz are always the best, i'm a big fan of stuffed button mushrooms, and the quinoa salad with black beans 'n mango from v'con is another recipe i super love! i really enjoy susan v's green bean casserole, and i love the thai recipe from yellow rose recipes!

every time i have to feed non-vegans i go with tempeh gyros. they LOVE them!! the fake tzatziki recipe from v'con works great but i seem to recall not bothering to drain the liquid from the cukes and just not adding water instead. i've tweaked the recipe so many times it's my own at this point (for the tempeh marinade)... but i can send it to you if you're interested.

The dish in that final photo looks totally irresistible! I love marinated portobellos and this version sounds great. Nice take on the challenge!
