Stromboli & Minestrone

Tonight was fancy soup and sandwiches so we could spend time putting up our Christmas decorations.

Yesterday I made the dough for the stromboli. Tonight we rolled it out and filled it with onions, roasted red peppers, sundried tomatoes, pepperocini peppers, spinach, and thin sliced tofu. Two things to remember if you ever make this: (1) the filling ingredients must be very dry and (2) since it's not filled with the usual deli meat and cheese, you must season the filling. We sprinkled on some italian seasonings, garlic, and red pepper. I also served a marinara sauce (from a jar because I didn't think about it ahead of time) and an italian dressing as dipping sauces.










The stromboli baked up beautifully and it tasted awesome. Plus it was fun! I also made a minestrone soup that was thick with every vegetable imaginable, and two kinds of white beans and pasta. It was kind of a mixture of all of the italian soups in Nava's new soup book.






For dessert I made an apple cranberry crisp. I used red and green apples and fresh cranberries. The topping was made with oats and nuts. It was the most beautiful red color.




I also made VWAV sparkled ginger cookies, soft variety. These will definitely be in some gift baskets. They are delicious.



I thought I had a picture of my Christmas tree. Oh, well, maybe next post.

Oh yum - all your food looks delicious! I'm especially interested in that stromboli - knowing that you don't eat wheat, what kind of flour did you use? It looks perfect!

The soup, crisp, and cookies got my attention, too...there are just too many things on my "to make" list!

After typing that comment about "knowing" you don't eat wheat, I realized that I had recommended a sprouted tortilla to you a couple posts ago that contains sprouted...wheat. Duh! Sorry about that.

Yum - your stromboli looks great. I've been looking for a calzone alternative that I can serve my family. I'm going to try your stromboli -- did you just use pizza crust?

Kati & MV - I made my own bread with 1/2 whole wheat and 1/2 bread flour, definitely not gf. Since going gf, I can tolerate a little wheat on occasion. I think a pizza dough in a can or box mix would work just fine.

I just now found your site and I'm glad. That stromboli looks oh so good. I think it's great you "forgot" about the marinara. Nice to dip things sometimes. Thanks for sharing. Sometimes I feel like I cook the same things over and over. It's nice to get reminded of some other delicious meals.

Hey - I wanted to let you know that I checked out all the pudding mixes I could find, in hopes of trying the Mollie Katzen granola again, but they all contain some sort of cane sugar. =( Unfortunately, it looks like I won't be trying the recipe any time soon, but I hope you'll still try the one I posted about. Sorry to be such a party pooper!

I don't think I've ever had stromboli before. But wow! Yours looks so beautiful. It would really make a pretty potluck item. The apple cranberry crisp sounds delicious! I've been eating a lot of those lately and am taking a break for a bit. I'm going to try to have smoothies for dessert for the next week or so. Need to try to cut down on the excess sugar.

Wow, look at all the delicious food you've made while I've been offline. Everything looks wonderful!!! The Stromboli sounds amazing. Yum!!! And the ginger cookies look so pretty. Yet another recipe I haven't tried from VwaV. I thought of you the other day while at my local Asian grocery store. I kept thinking I wish this one as big as the Asian Grocery Store you go to!!!! :)
