Spaghetti Squash Mexicana

Another successful V-con recipe. It’s not quite as pretty since I used pinto beans instead of black beans as the recipe called for, but I had just made a pot of homemade pintos and actually didn’t even have a can of black beans. I also didn’t have all the ingredients for the yummy pineapple salsa to go with it, so I sliced some avocado and used my favorite local tomato salsa for the topping. But I did have the basics – spaghetti squash, corn, and plenty of cilantro – spicy and delish!

Oh, this looks good! I like your substitutions! Avocado can join my dinners anytime!

I have not made anything from this recipe book yet. I'm seeing now that I should open it up and pick some of these recipes! I've been hearing great things, and yours certainly looks like one I'd love!

mmm, the pinto beans sound perfect for this dish, actually - and wow, those avocado chunks are gorgeous!! love the green/yellow hue against the brown beans :0) spicy and delish, you say? that's my kind of dish, for sure!!

I think the avocado is perfect for this dish. Yep, Santa must bring me V-con for Christmas!

I think you made a good call - pintos are much better than black beans. I've been on a pinto kick for months.
