Krispy Cookies

A recipe:



Krispy Cookies (gluten free)

Makes 1-1/2 dozen cookies

¾ cup oats
½ cup gluten free flour (any kind should work)
½ t. baking soda
½ t. baking powder
½ t. salt
½ t. xantham gum
3 T. canola oil
½ cup applesauce
¼ cup natural sugar
¼ cup maple syrup
1-1/2 t. vanilla
1 cup rice krispies
¾ cup chocolate chips (or carob)
¼ cup peanuts (or any other nuts you like)

Heat oven to 350 degrees. Line a baking sheet with parchment paper.

In a large bowl, mix together the oats, flour, baking soda, baking powder, salt, and xantham gum.

In a separate bowl, mix together the oil, applesauce, sugar, maple syrup, and vanilla. Stir the wet mixture into the dry and mix well. Stir in the rice krispies, chocolate chips, and peanuts.

Drop heaping tablespoons of cookie mixture onto baking sheet (I used a cookie scoop) and flatten slightly. Bake 13 to 14 minutes or until cookies are set and edges are golden. Let cool a few minutes on baking sheet, then transfer to wire rack to cool completely.


Extra delicious while still warm.

Like all your baked goods, they look magnificent. I love anything with rice krispies (I love the crackle as you eat them!) so these cookies sound delicious to me!

These look amazing,I tried using rice krispies in cookies some time back but found the krispies became softer when baked,did yours remain crunchy ?

Thank you so much for posting this recipe. I am going to make it as a nice surprise for a gf friend I am going to visit in October.
Btw is is possible to substitutel guar gum for the xanthan?

Usha, the krispies don't stay crispy for very long, but the peanuts do!

Mihl, yes, guar gum for xantham is okay.

youknow, puff riced really needs to end up in my mouth more often. if only it would stay crunchy longer :) these however look dangerously good... little tasty balls i could keep poopin' in my mouth... you are always an inspiration to me... I think ill attempt some gluten-free baked goodies this weekend in your honor

Hey there - no, not an annual fast (my last was a year and a half ago), though I would like to make it an annual thing.
