Veggies and Cookies

I had the best time this afternoon hanging out with fellow vegan blogger, the lovely Christina, other foodies, and our local food writer while we did the photoshoot for Thanksgiving side dishes to be featured in the food section of our local paper. The dishes I tasted were fabulous, so I’ll be sure to post a link to the recipes which are scheduled to be published on the 24th. It was so interesting to watch all the food styling. The photographer spent 5 minutes taking pictures of the cooks, and 2 hours taking pictures of the food!


I haven’t been cooking too much lately. I want to cook, but it’s just so busy this time of year. I ate at a Korean restaurant yesterday and had an amazing hummus and veggie wrap, and Japchei, which is (from the menu): A warm bowl of clear sweet potato noodles and an assortment of veggies: carrots, green cabbage, red cabbage, red bell peppers, and organic spring greens. It’s delicious. I brought about half of the noodles home. Aren’t they beautiful? I’m going to look for them at my Asian market this weekend.



I stirfried some broccoli, mushrooms, onions, and spinach to have with my leftover noodles.

I picked up some multicolored cauliflower and some broccoli to roast. It was in a bin already chopped and was practically irresistible. I took before and after shots. Before…


… and after roasting. Yummy!



Tonight I started feeling guilty about neglecting my recipe testing for Ricki, so I made a batch of her Classic Peanut Butter Cookies. These cookies are perfect. I must take them to work so I don’t eat them all. And especially for Shellyfish and her Guppy, I added sprinkles to the tops.

I spent far too much time taking shots of these Aristo Wellness bars I found. When I read the flavors of these bars, I snatched them up and put them in my bag – Nutty Pomegranate and Cranberry with Chocolate, and Nutty Goji and Orange with Chocolate.



I mistakenly equated *wellness* with *vegan* and didn’t read the ingredients before purchasing them. These bars contain milk and whey, so don’t buy Aristo bars if you want a vegan bar. Bake these instead!

I have to admit I've never baked (or eaten) a peanut butter cookie with sprinkles on it, but you and Shellyfish (or should I say Guppy) make them look so darned appealing I'm going to have to try it out! :)

Those noodles ARE gorgeous, even gem-like, somehow. Paired with the stunning colors of those veggies, it looks like your lunch really was was a treasure!

Yippie for sprinkles!! I would never have done it, the genius is all 3 year old Guppy's - but it does make them look so pretty!
Speaking of pretty, those noodles! Wow - beautiful and delicious!

Those pb cookies look absolutely perfect...and the cauliflower is gorgeous! Yeah, I pretty much want everything but the bars in this post.

and those noodles certainly look...interesting. i LOVE purple cauliflower. for some reason, it's the only cauliflower i like at all. so good roasted, too! mmm.

i'm love'n the sprinkles on the cookies. makes them look even more fastastical - and they already look pretty darn glorious to me! :D mmmmmmm! those noodles are really pretty - and i'm loving the roasted veggies. i think roasting veggies is one of my favorite ways to enjoy them - it just gives them such a nice flavor. mmmmmmm! sadface on the bars not being vegan - they sure sounded like the would be! :(

those noodles are really neat!!! i am a big lover of sweet potatoes and it would be so cool to try those.

love that purple cauliflower too!! farmers grow the craziest crops these days haha

Everything just looks so gorgeous. You captured the intense colors of the cauliflower and broccoli to perfection.

And the noodles! I was hungry when I got home from work and now I'm starving. I should go roast some cauliflower...

Cool that the cauli kept its colour after being cooked. I'd love to make cauliflower cheeze with it!

Sprinkles are good, but where do you find VEGAN sprinkles?

I've been a vegan for 10 years and never found any that are made from sugar that hasn't been refined with charred animal bones.

Haha, I do the same thing at stores where I see something "healthy" and just kind of assume it's vegan. It should be, right?

The noodles look really good, as does the multicolored broccoli!

Jason B., I never really thought about vegan sprinkles. I don't use any sugar very often, and I actually brushed my sprinkles into the sink and didn't eat them. I guess I'll have to find a way to color my own coarse sugar if I want to use them in the future. Perhaps I should get to work on that for some Christmas ocokies. Thank you for your comment.

I don't know if I can find all of the ingredients for Samosa Soup where I am, but I am salivating to try it.
