Dreamy, Refreshing Soup


It may not look like it from my picture, but this cold soup is the lightest, smoothest, and most refreshing thing I’ve eaten in all of the past two weeks of 102 degree heat. I got the recipe from GOOP.com. Gwyneth says it will be in an upcoming book called “Clean.” I made a double recipe, and what I couldn’t eat I used as salad dressing. It’s so delicious and you can make it in less than five minutes.

Cucumber and Avocado Soup

Zest of ½ a lime
Juice of one whole lime
½ teaspoon salt
1 cucumber, peeled, seeded, and chopped
½ an avocado, peeled and chopped

Blend everything together until totally creamy and smooth.



I’ve not been around lately due to the College World Series, but there’s a two hour rain delay now so I’ll take this time to come see what you all have been up to!

I made a soup similar to this once, using celery instead of cucumber, and it was so refreshing! Yours looks great!

Cuke & avacado soup does sound very delicious. I will definitely try this!
Using the leftover as a salad dressing is a good idea too, Diann.

This is exactly what I need right now - if only I had a ripe avocado and a cucumber! We're sweltering in 95˚ heat with high humidity. I know you Texas residents don't feel sorry for us, but we don't have air conditioning in our house except for one bedroom.

That's very similar to my fave raw vegan soup. Avocado coconut soup. fresh young coconut meat, juice and avocado. A little salt and pepper and blend it up smooth-yum!

That looks so good. It is hot as blazes today and I am dragging big time. This is cooling me off just looking at it. We were watching the games too. Good games. Sorry Texas didn't win.

I'm not too big on most cold soups, but this one might make a notable exception. I even have both cucumbers and avocados on hand right now!
